Banana Oatmeal Vegan Pancakes




Ingredients:
1 ¼ cup old fashioned oats
½ cup organic whole wheat flour
2 tsp. baking powder
½ tsp. sea salt
1 ½ cups coconut milk
2 ripe bananas
2 - 4 tbsp coconut butter for cooking and garnish

Instructions:
Put the oats into a food processor and process until you have oat flour. Pour into a bowl.
Blend the bananas in a blender until smooth and creamy.

Pour the pureed banana, wheat flour, baking powder, sea salt, and coconut milk into the mixing bowl with the oat flour. Stir until you have smooth pancake batter.

Set the stove to medium heat and use the coconut butter to cook your pancakes. You could also use olive oil or another oil.
Makes 6 medium sized pancakes.
Garnish with coconut butter, mango slices and honey.
