Salisbury Steaks With Sauteed Watercress



6 ounces of lean ground beef
1/3 cup of finely diced red bell pepper
1/3 cup of chopped scallions
2 tablespoons of plain dry breadcrumbs
2 tablespoons of hoisin sauce
1 tablespoon of minced fresh ginger
1 1/2 teaspoon of canola oil
8 cups of trimmed watercress
1/4 cup of Shao Hsing rice wine

Directions:
Put rack in the oven and preheat the broiler. Coat the broiler pan as well as the rack with cooking spray.
Mix beef, breadcrumbs, 1 tablespoon hoisin sauce, bell pepper, scallions and ginger in a bowl. Form the mixture into patties. Place on the broiler pan rack. Broil until cooked on both sides. Heat the remaining 1 teaspoon oil in a large skillet. Add watercress and cook until wilted. Divide the watercress between 2 plates. Return the pan to medium-high heat. Add rice wine and the remaining 1 tablespoon hoisin sauce. Top the watercress with the Salisbury steaks and drizzle with the pan sauce.
