Ingredients
• 1 Cup Cooked Chicken Meat (Boiled or Grilled)
• 25g Salted
• 150g Chestnut mushrooms or Button mushrooms, sliced
• 150g Shiitake mushrooms (or any other variety you prefer). sliced
• 200g Grated Cheddar Chesses
• Salt to taste
• 1 tspoon Freshly Ground Pepper
• 1 tspoon Dry Oregano
• 1 Pack Shop Bought Ready Puff Pastry
• 1 Medium Egg
Method:
1. Preheat the oven
2. Tear the chicken flesh from the bone
3. Heat butter in a frying pan, add mushrooms and sautée for a couple of minutes
4. Remove and cool
5. In a bowl mix cooled mushrooms, grated cheese, oregano, salt & pepper
6. Cut the puff pastry into squares
7. Add filling into onto half of the square leaving about ½ inch border
8. Beat an egg in a small bowl and use a pastry brush to brush the egg mixture on the border of the pastry
9. Fold each square into a Triangle, enclosing the filling & lightly pressing the edges
10. Brush top of the tops of the pastries with more of the egg wash and prick the top with a fork to create a small steam vents
11. Line a baking tray with baking paper, place triangle on it at least 3-4 inches apart as they will puff up while cooking
12. Bake for roughly 15-20minutes, until the pastry is crisp and golden brown
