Homemade Pesto Bruschetta



Ingredients:
1 French baguette sliced at a 45-degree angle about 1/2-inch thick
Homemade pesto (recipe below)
Small box of cherry tomatoes
6 large Fresh mozzarella cheese or 12 small ones
Extra virgin olive oil
Basil leaves
pesto:
1 large bunch of basil leaves only washed and dried
3 medium cloves of garlic sliced
1 small handful of slightly roasted pine nuts
Roughly half a cup of freshly grated Parmesan
Few tablespoons of extra-virgin olive oil
Salt and pepper to taste.

Directions:
In an electric blender combine the basil leaves, grated Parmesan, roasted pine nuts, sliced garlic cloves and olive oil. Be careful with the salt as the Parmesan is on the salty side. Preferably salt at the end. Add freshly crushed black pepper to taste.
bruschetta:
Brush your French baguette slices with extra virgin olive oil
Either put them oiled side down on the grill for a couple of minutes till you get nice grill marks on them or place them on a baking sheet olive brushed side up under the broiler till they are crisp and golden.

Top crisp baguette slices with fresh pesto you have just made, top with fresh mozzarella, cherry tomatoes and basil leaves.
