Ingredients:
6 egg whites
2 bars of 85% cocoa (I used Lindt brand, extra dark)
3/4 cup unsweetened cocoa powder
1/2 cup F1 Mint Chocolate Shake mix
1 cup Stevia
3/4 cup Protein Drink Mix
2 tbsp cornstarch
1/2 cup unsweetened soy milk
Method:
Pre heat oven to 350°
Melt 14 squares of chocolate in microwave, stirring occasionally, about 1:30 mins, set aside and let cool a little.
Mix together cocoa powder, F1 Mint Chocolate shake, 1/2 cup Stevia, 1/2 cup Protein Drink Mix, and cornstarch.
Whisk egg whites in separate bowl til white peaks, gradually add 1/2 cup Stevia and 1/4 cup Protein drink mix, whisk until a smooth, marshmallow cream consistency.
Take the leftover chocolate squares, there should be 6, and chop into small chunks (like chocolate chips).
Pour marshmallow cream mixture into dry ingredients and stir well. Add 1/2 cup soy milk, stir until mixture becomes a thick dough.
Fold in chocolate chunks, then pour in warm melted chocolate.
Lightly coat cookie sheet with coconut oil or Pam cooking spray.
Use hands to form dough into about 1 tbsp size patties (like Thin Mints) and place on cookie sheet, approximately 1 inch appart, should fit about 20 cookies on a large cookie sheet.
Optional: lightly dust cookies with Stevia for a powdered sugar effect.
Bake cookies for 5 mins, remove and place on cold plate to cool and serve.
